Easy Homemade Jambalaya

Not quite sure what jambalaya is, don’t worry, I’m really not sure if what I made was jambalaya… but last night Nate said he wanted to have some so I made up this recipe.



  • Any boxed rice mix that you want to use (we used butter and herb)
  • 3 cloves garlic, minced
  • 1 can Rotel, drained
  • 1 can black beans
  • 1/2 cup fresh mushrooms, sliced
  • 1/4 cup frozen corn
  • 1/2 Hillshire Farm beef polska kielbasa, sliced
  • 1/4 onion, chopped
  • Spices, to taste (I used black pepper, chili powder, cumin, paprika, cayenne pepper)

You don’t want to put cold ingredients into the rice mix so before the rice comes to a boil, in a separate skillet over medium heat cook the kielbasa until warm. If this was just for me I’d cook the onion in with the kielbasa however Nate hates onions so I cook them in a separate pan and top my jambalaya with the onions.  Once the kielbasa (and onion, if you are using onion) is warm, add the corn until warm.

Make the boxed rice mix according to the package.  Generally they will tell you to bring the rice to a boil and then turn to low and cover, once you get to this step add all the ingredients to the rice saucepan.  Once the rice is cooked and everything is hot you are ready to eat!

You can top your jambalaya with sour cream, cheese, guacamole or whatever sounds good to you!
